How to Cook Mini Red Velvet Cheesecake
The best way to do this is is by following the step by step instructions while you
cook. so here are the ingredients you can check to see if you’ve got them already or make time to go to the store and pick them up.
The first thing that you’ll need are Nilla wafers- 24 of them. If you try to use the knock-offs (vanilla wafers) on this one we can’t promise you the same great results.
Next would be an 18-oz package reduced-fat cream cheese. No need to refrigerate, just keep it at room temperature. A 1/2 cup powdered sugar, 1 egg white and 1 teaspoon of vanilla extract is next. 1/4 cup reduced-fat sour cream, 1/4 cup pureed beets (canned or steamed) and 2 tablespoons unsweetened cocoa powder should do the job. Oh yeah, make sure you’ve got a 12-cup mini-muffin tin and some paper liners.

Preheat your oven at 300°F. Line a 12-cup mini-muffin tin with paper liners. Place a Nilla Wafer into each muffin cup.
If you’re on a lap top you can bring it as close to you and your oven as conveniently possible, other wise keep walking back to view the screen…
In a large bowl, beat the cream cheese and powdered sugar with an electric mixer on medium speed until smooth or just go old fashion and use your arm. Add the egg white and the vanilla, and mix well. On low speed, beat in sour cream until just combined. Reserve 1 cup of the batter and set aside for the swirl or simply beat in the beets and cocoa powder for an all-red cheesecake.
Now the is how you get the swirl. For the swirl, fill each muffin cup halfway with the white batter. Spoon a dot of the red batter on top of each, and with the tip of a knife, swirl the red batter in.
Bake 10 to 12 minutes, until the edges of the cheesecake begin to firm while the center is still soft. Remove cheesecakes from the oven and cool in pan on a wire rack for 30 minutes. Cover and chill at least 1 hour before serving.

Take this basic recipe for grilling pineapples and throw in all kinds of spices.
Grilling Pineapple is super easy and you can give it such a variety of flavor- depending on what you coat it with.
The basic recipe is a fat splash of vegetable oil, 3 tablespoons of honey, a big fat squeeze of lemon (or lime) juice and a pinch black pepper.
Toss fresh pineapple slices (that about 1/2 to 1 inch thick) in the marinade and throw them on a pre-heated grill.
Try these combos:
* lemon and roughly chopped basil.
* cayenne and cinnamon
* finely chopped chili and orange zest
* ginger powder, finely chopped scallions and replace the vegetable oil with sesame oil.

A Spring Treat!
Spring is officially here this weekend! I can’t wait to head out and enjoy the sunshine!
One of my favorite things to eat when the weather is warm is ice cream! Although it’s a delicious treat, it’s not the healthiest food.
One way to enjoy the same taste with a lot less guilt is by eating a great alternative called sorbet. What’s the difference? Sorbet has fewer calories and a lot less fat! The flavor is just as good, if not better, and you don’t have nearly as much guilt about indulging in this healthy “cool” treat!

Irish Chicken and Dumplings
Tomorrow is St. Patrick’s Day and along with wearing green and indulging in green beverages, I love to partake in Irish cuisine. My favorites are soda bread and potatoes, prepared any way. However, even though I know it’s a staple, I just can’t eat corned beef….cabbage is OK though.
I found this recipe as a main dish alternative for the holiday tomorrow. I’m not sure what makes this chicken and dumplings Irish, but it sounds much better than any corned beef. Hope you enjoy!
What are you making for St. Patrick’s Day?
Ingredients
* 2 (10.75 ounce) cans condensed cream of chicken soup
* 3 cups water
* 1 cup chopped celery
* 2 onions, quartered
* 1 teaspoon salt
* 1/2 teaspoon poultry seasoning
* 1/2 teaspoon ground black pepper
* 4 skinless, boneless chicken breast halves
* 5 carrots, sliced
* 1 (10 ounce) package frozen green peas
* 4 potatoes, quartered
* 3 cups baking mix
* 1 1/3 cups milk
Directions
1. In large, heavy pot, combine soup, water, chicken, celery, onion, salt, poultry seasoning, and pepper. Cover and cook over low heat about 1 1/2 hours.
2. Add potatoes and carrots; cover and cook another 30 minutes.
3. Remove chicken from pot, shred it, and return to pot. Add peas and cook only 5 minutes longer.
4. Add dumplings. To make dumplings: Mix baking mix and milk until a soft dough forms. Drop by tablespoonfuls onto BOILING stew. Simmer covered for 10 minutes, then uncover and simmer an additional 10 minutes.

Looking for a great appetizer and dip idea for the upcoming Super Bowl this Sunday? I found this awesome recipe here for a cheese ball that’s in the shape of a football. It’s great with crackers or tortillas! Hope you enjoy!
Ingredients
2 (8-ounce) packages cream cheese, softened
2 cups shredded cheddar cheese (8 ounces)
1/2 cup freshly grated Parmesan cheese
1/2 cup mayonnaise
1/4 cup chopped green onions
1 tablespoon sugar (optional)
1/2 teaspoon salt
1/4 teaspoon ground black pepper
1 cup chopped pecans, toasted
Roasted red pepper strips
Directions
- Using an electric mixer, beat cream cheese and mayonnaise on medium speed until well blended.
- Add onions, sugar, if desired, salt and black pepper; mix well. Cover and refrigerate several hours or overnight.
- Form cheese mixture into football shape; roll in pecans.
- Garnish with sliced roasted red pepper strips for the “lacing,” if desired.
Makes about 30 servings.
High Calories At Your Favorite Restaurants
If you are looking to start off the year right, then you should probably stay away from these foods. I have to admit everything on this list is a favorite for me. I actually just visited Chili’s last Friday. I didn’t get the meal on this list, bit I am sure I got something that is pretty close in calories.
This list alone will be a shocker and may get you on the right path if you are not already there. It certainly woke me and now I know what my body is taking in, I am less likely to eat these foods.

Cinnamon Rolls For Christmas Breakfast
Ingredients
- 1 cup milk
- 1 cup water
- 1/4 cup butter
- 1 1/2 teaspoons salt
- 6 cups all-purpose flour
- 1 1/2 tablespoons active dry yeast
- 1/2 cup white sugar
- 2 eggs
- 1/3 cup butter, softened
- 1 1/2 teaspoons ground cinnamon
- 3/4 cup white sugar
- 3/4 cup raisins (optional)
- 3/4 cup chopped walnuts (optional)
- 2 cups confectioners’ sugar
- 3 tablespoons butter, melted
- 1/2 teaspoon vanilla extract
- 3 tablespoons milk
Directions
- In saucepan, heat 1 cup milk, water, and 1/4 cup butter until very warm (butter doesn’t need to be completely melted). Place milk mixture, salt, flour, yeast, sugar, and eggs in the pan of the bread machine in the order suggested by the manufacturer. Select the Dough cycle. Press Start.
- Once Dough cycle is complete, remove the dough from the bread machine. Punch down, and divide into 2 parts. On a floured surface, roll each part into a large rectangle. Smear each rectangle with the softened butter. Combine the cinnamon and 3/4 cup sugar. Sprinkle over the rectangles. Generously sprinkle the raisins and/or chopped nuts over the top.
- Roll the dough up into two logs starting at the long side. Cut each log into 12 slices. Place the rolls cut side down into two 9×13 inch greased baking pans. Cover, and let rise in a warm place until almost doubled (about 30 minutes).
- Bake in a preheated 375 degrees F (190 degrees C) oven for 20 to 25 minutes, or until golden. Combine the confectioners’ sugar, 3 tablespoons melted butter, vanilla, and 3 tablespoons milk. Frosting should be thick. Spread over baked rolls and enjoy.
