March Madness Amazement!

sweetsixteenMarch Madness resumed last night in an exciting night played by the first half of the Sweet Sixteen.

In the early games, West Virginia stomped Washington by 13 points. They’re now being called the tournament’s new favorite. Then came a huge upset. Butler beat No. 1 seed Syracuse in a tight race that ended 63-59.

During the second games Kentucky beat Cornell 62-45….like we all didn’t see that coming!

Then March Madness got really interesting. This is also where my sleep deprivation comes in for today. I was up way past my bedtime because the Xavier vs Kansas State game went into double overtime! This is the first time since 1997 that a Sweet Sixteen ended in 2OT.

In the end, the Kansas State Wildcats defeated Xavier and I was happy.

If you’re like me, your brackets are way busted by now…but that’s not preventing me from enjoying the games! Can’t wait for tonight. Go DUKE!

Spring Cleaning

 Besides flowers and Easter bunnies this season we all have to look forward to some Spring cleaning whether it be at home, work or inside our cars!

I finally cleaned my car last weekend. I found one too many gross sippy cups under my seat. My daughter loves to fling them around inconspicuously in the back of the car.

I’m moving on to my home this weekend and will clean out some things that really need to go. We all do this, hold on to things that really need to be in trashed or given away. What are 3 things that you should have thrown away a long time ago?

My list includes:

Pink stiletto heels that I wore my freshman year in college.

Almost 5 bags of half eaten pretzels in my pantry. They’re all stale and I just keep buying more.

Some old bottles of aspirin and Advil in my medicine cabinet. I’m horrible at throwing away expired medicine.

A Spring Treat!

sorbetSpring is officially here this weekend! I can’t wait to head out and enjoy the sunshine!

One of my favorite things to eat when the weather is warm is ice cream! Although it’s a delicious treat, it’s not the healthiest food.

One way to enjoy the same taste with a lot less guilt is by eating a great alternative called sorbet. What’s the difference? Sorbet has fewer calories and a lot less fat! The flavor is just as good, if not better, and you don’t have nearly as much guilt about indulging in this healthy “cool” treat!

Happy St. Patrick’s Day The Apartments at Arboretum!

Happy St. Patty’s Day to all of our residents! I found this really cute and funny video featuring the cutest pets all dressed-up for today’s holiday.

What are your plans to celebrate? I’m going out in my best green attire. Maybe I should ask one of these pets if I can borrow their hat? They’re adorable!

Irish Chicken and Dumplings

chicken dumplingsTomorrow is St. Patrick’s Day and along with wearing green and indulging in green beverages, I love to partake in Irish cuisine. My favorites are soda bread and potatoes, prepared any way. However, even though I know it’s a staple, I just can’t eat corned beef….cabbage is OK though.

I found this recipe as a main dish alternative for the holiday tomorrow. I’m not sure what makes this chicken and dumplings Irish, but it sounds much better than any corned beef. Hope you enjoy!

What are you making for St. Patrick’s Day?

Ingredients

* 2 (10.75 ounce) cans condensed cream of chicken soup
* 3 cups water
* 1 cup chopped celery
* 2 onions, quartered
* 1 teaspoon salt
* 1/2 teaspoon poultry seasoning
* 1/2 teaspoon ground black pepper
* 4 skinless, boneless chicken breast halves
* 5 carrots, sliced
* 1 (10 ounce) package frozen green peas
* 4 potatoes, quartered
* 3 cups baking mix
* 1 1/3 cups milk

Directions

1. In large, heavy pot, combine soup, water, chicken, celery, onion, salt, poultry seasoning, and pepper. Cover and cook over low heat about 1 1/2 hours.
2. Add potatoes and carrots; cover and cook another 30 minutes.
3. Remove chicken from pot, shred it, and return to pot. Add peas and cook only 5 minutes longer.
4. Add dumplings. To make dumplings: Mix baking mix and milk until a soft dough forms. Drop by tablespoonfuls onto BOILING stew. Simmer covered for 10 minutes, then uncover and simmer an additional 10 minutes.

Time Change!

flowers feetI love when it’s the middle of summer and it doesn’t get dark until almost 9:00pm some evenings. The days seem so much longer and I get so much more done. Those days are just ahead…

The time changes for daylight savings time this weekend at 2:00am on Sunday, March 14th.

This is a friendly reminder for our residents to set your clock ahead on Saturday evening so that you aren’t late to work on Monday!

The time change is a signal for warmer days and barbeque season. I can’t wait! Are you looking forward to daylight savings time?

St. Patrick’s Day Festivities

leprechaun cartoonIt’s that time of year to pull out that hideous kelly green sweater that you save for one time a year. St. Patrick’s Day is next Wednesday, March 17th, but the celebration of the Luck of the Irish begins this weekend on Saturday, March 13th in downtown Raleigh.

The 2010 Raleigh St. Patrick’s Day Parade will start at noon on Wilmington St. and it will end at Moore Square.

When the Parade is over the Wearin’ ‘O the Green festival will begin! The Festival is held at the end of the parade route. There will be live music and dancing. In addition, there will be a wide variety of vendor booths: Irish Organizations, Irish jewelry and other trinkets, food vendors, children’s games and activities. Fun for the entire family!

Alice and Wonderland Take Two

mhatterWho else is excited to see Tim’s Burton’s new movie Alice and Wonderland this upcoming weekend? I’ve been waiting for months! Johnny Depp stars as the Mad Hatter and newcomer Mia Wasikowska, plays teenage Alice in this revamped story from the 1951 Disney animation.

As a little girl I loved the story. The magical fantasies and wonderful lessons in a colorful world with talking flowers made for TV delight that I watched over and over again. Something tells me this new Disney version will be more mystifying. I think I’ll wait a few years to show this one to my 2 year-old. It will be a movie I’ll adore on my own.
